Vodka cherries

Spread the love this festive season with some homemade vodka cherries. These cherries are delicious served with ice-cream, and a little of the syrup can be added to champagne for a cocktail or soda for a refreshing drink.

Vodka cherries

Prep time: 20 minutes; Cook time: 15 minutes

750g cherries

1 cup water

1 cup caster sugar

1 vanilla bean, split

1 cinnamon quill

1 cup vodka

– Wash and dry cherries, remove the stems and pips. Wash 4 x 1-cup capacity jars (or any number of jars equalling 1 litre capacity) and their lids. Place into a just-warm oven to dry and sterilise.

– Combine sugar and 1 cup water in a small saucepan. Stir over low heat, without boiling, until sugar has dissolved, then bring to the boil. Add cherries, vanilla bean and cinnamon quill and return to a simmer. Cook for 5 minutes. Stir in vodka.

– Spoon cherries into jars, and cover with liquid. Seal tightly with a lid. Label, date, and store in the fridge for up to 4 weeks.
