Pho on the ‘Pho Mile’

My spicy beef noodle soup and the soul of Vietnamese Pho: The best beef is simmered slowly, for hours, to produce at broth that retains it’s full rich flavour, before being seasoned with seven different herbs and spices like ginger, cloves and star anise. The light-bodied broth is ladled over fresh rice noodles, topped with thin slices of rare beef, coriander and onions and accompanied with bean sprouts, Vietnamese mint, chilli and fresh lime. A dish that’s traditionally enjoyed at every meal of the day, was tonight, my dinner at Song Que on the ‘Pho Mile’.
